Tasting notes:

  • Sweet plum, Black currant with a olive/meaty nose with subtle hints of violet
  • Dry Tannins with a presence of cedar
  • Perfect with fillet mignon & mushrooms braised in a whiskey pan sauce with potato leek squares

Winemaking notes:

  • Harvested early in the morning and cold soaked for 7 days at 11˚C
  • Fermentation over 8 days with 5 punch downs a day
  • 5 days post-ferment maceration
